Cashew-Lime Chicken with Rice

This is an easy, quick-to-prepare, flavorful dish! You can add broccoli florets at the end while it simmers to make dinner even easier.




1. Cook the rice according to the package directions. Meanwhile, heat the oil in a large skillet over medium heat. Add the ginger and garlic and cook, stirring, for about 1 minute. Add the chicken and cook, stirring, until browned on all sides, about 5 minutes. Add the salt and pepper and stir to coat.


2. Add the broth, hoisin, lime juice, and zest and bring to a simmer. Partially cover the pan and simmer until the chicken is cooked through and the sauce thickens, 8 to 10 minutes.


3. Chop the cashews. Serve the chicken mixture over rice and top with cashews.
